You may look at this gratin and think these challenging little beasts of Brussels Sprouts are hidden. Well they are not!

They are in this gratin, because we want to achieve a more palatable version of them! Let’s face it they’re bitter and the white sauce will soften them.

Now French researchers have shown children are more likely to eat gratin then the steamed version of a bitter veggie.

You will need: a baking dish and a saucepan. The saucepan is used to make the béchamel sauce.

Ingredients:

  • Brussels Sprouts: 200g, cleaned, and cut in quarters.
  • Cheese: shredded mozarella or gruyere 100g
  • Flour:50g (for a gluten free version use corn flour)
  • Milk: 600ml (warmed up works super well for béchamel)

Let’s do it:
Pre-heat the oven at 200C.

  1. Place the Brussels sprouts in the dish
  2. Spread shredded cheese across.
  3. Use the saucepan to make the béchamel: melt the butter on medium heat
  4. Remove from the flame and add the flour at once, mix well.
  5. Place back on medium heat for 1min, until a few bubbles appear.
  6. Pour milk in small amount until all has been added.
  7. As soon as bubbles appear on medium heat, remove from the heat.
  8. Pour béchamel and place in oven for 20 min.
