One pot Zesty Chicken With the Lot

Are you a #onepot fan yet? Limited effort, limited washing, yet flavour and yumminess.

The flavour of this chicken dish is brought together by some orange juice and a hint of vinegar. We served it with a yoghurt sauce to complete the meal in a nutritious and tasty fashion.

 

 

Preparation: 15min. Cooking 1 hour 15min.
You will need:

 

 

  • Chicken drums and or thighs: 600-800g
  • Potatoes: 400g, unpeeled, cut in two (bite size)
  • Pumpkin: 300g: peeled, cubed
  • Orange: 1 juiced
  • Vinegar: Balsamic 1 tbsp
  • Onion: 1 quartered
  • Garlic: 1 crushed
  • Thyme: 1 sprig
  • Olive oil: 1 tbsp
  • Chicken stock: 1 Litre
  • Parsley: chopped finely
  • Optional yoghurt sauce: 200ml of yoghurt, juice of 1/2 lemon, crushed mint leaves, salt and pepper.

 

Let’s do it:
In a large thick saucepan or pot,

  1. Heat olive oil and sear the chicken on all sides until browned,
  2. Remove chicken to a plate
  3. Add garlic, onion, thyme and stir for 2 minutes on high heat,
  4. Pour orange juice and vinegar and stir for 2 minutes,
  5. Return chicken to the pot, cover with stock,
  6. Reduce heat to simmer,
  7. Add potatoes, and pumpkin, cover partially with a lead,
  8. Simmer for 1 hour at least.
  9. Sprinkle the chicken with parsley and serve with optional yoghurt sauce.
